I love old fashioned breakfast potatoes, especially with other breakfast dishes, like air fryer French toast sticks, waffles, or a breakfast bowl. You are going to love this recipe because the potatoes are so crispy on the outside, and light and fluffy on the inside. They are a delicious breakfast side dish.
What you need to make breakfast potatoes
This recipe makes crispy potatoes that are so full of flavor when I make them in my Cosori 5.8 quart air fryer. For a smaller batch of breakfast potatoes, I halved this recipe and use my Dash Air fryer. I also used this food slicer that cubed the potatoes for me. It makes cutting these potatoes SO much easier and faster. If you don’t have one, you can use a sharp knife to cut the potatoes into 1- inch squares. Besides an air fryer, to make this recipe, you will need:
Russet or Yukon Gold potatoes 1 teaspoon salt ½ teaspoon black pepper 1 teaspoon paprika 1 teaspoon garlic powder 1 Tablespoon olive oil
How to make air fryer breakfast potatoes
To make these potatoes, you will want to begin by peeling and rinsing them. Then cut the potatoes into 1 inch cubes, about the size of dice. Next, using a mixing bowl, toss the cubed potatoes in olive oil and then the seasonings, until they are well coated. Place the seasoned potatoes in the air fryer basket, and air fry at 400 degrees Fahrenheit for 20 minutes, shaking the basket halfway through the cooking time. The potatoes should be golden brown and crispy when done.
Notes:
You do not have to soak the potatoes in cold water to get crispy breakfast potatoes, like you do when making air fryer French fries. If you want heartier breakfast potatoes, or to make it as a meal, you can add chopped red or green bell peppers or onions when cooking. For spicier potatoes, you can add a ½ tsp of chili powder to the seasonings, and then serve with a hot sauce, like Louisiana Hot Sauce. Add your favorite shredded cheese while they are hot to make your breakfast potatoes cheesy. Not all air fryers are the same, and if yours has a lower wattage, you may need to adjust the cook time.
Can I re-heat air fryer breakfast potatoes?
Absolutely. If you need to reheat leftovers, just place them in the air fryer basket, and cook them for 3-5 minutes at 400 degrees F, or until they are warm.
